Tomato Feta Pasta

 The feta -tomato pasta has been doing the viral rounds for some time. I have seen many versions of it and always wanted to try it. If you have a TV dinner night planned, this is the perfect dish for it - because it is a one pot dish and even the washing up is quick and easy.

I am going to use the picture of the tomatoes and the feta since that looks way sexier than the finished dish :-)

The beauty about this simple dish is you can add more vegetables if you like and chop and change the herbs. I was able to use up the asparagus in the fridge and you know I cannot be without chilli.  With the garlic, you can add less, I just love the smell and taste of baked garlic so I added more.  And one it is baked, you can mush it up like butter, so it is not even visible anywhere in the final picture!

Basil and Tomato pasta

Today is the officially the first day of Autumn in Melbourne.  I walked into my favourite vegetable shop and saw Kumato tomatoes on sale. For my friends in India, this variety of tomato is a rich red colour - the skin is almost black and very sweet.  There was also plenty of basil and I knew exactly what I wanted for dinner.

This recipe is one of those that you can whip up in half an hour and the whole family will be licking their bowls at the end of the meal. The quantities given here are enough for a family of four.

Beef Lasanga

 The family got together and cleaned the house yesterday.  By house I mean mostly the kitchen - the oven, the rangehood, the flue, the floor ....oh, it was hard work scrubbing and washing.  Lucky I didn't have to cook as we had plenty of left over pasta from the previous day.  While we were cleaning the kids said, amma, we haven't made Lasagna in ages.  So today, in the clean kitchen that was my first dish.

When the kids were little, Lasagna was a staple dish as it was easy to cook, easy to store in the fridge and easy to re-heat if needed.  The kids are all grown up now and I realised I hadn't made this in a few years - so here is a nice recipe for a weekly staple for time pressed mothers!

Tomato Leaf Pasta and Roasted Tomato sauce

What do you do when your garden presents you with a whole heap of tomatoes and the leaves on the plants look so good you do not want to waste it?  I checked to see if tomato leaves were edible - spent two days researching that - and they are edible, so then the next step was to find a suitable recipe - and this is what I got.

Tuna Pasta with a Twist

Some days you come tired after work and you just want to get cooking over and done with as soon as possible - but you also want something tasty to eat.  This recipe ticks all the boxes and was given to us by a dear friend Laura.  We did add a bit of Indian to it - and all of us love it very much.  Today I want to share this with you - and especially for my brother who is a bachelor and trying to cook up some pasta that he can make with minimum fuss.
