Tomato Feta Pasta

 The feta -tomato pasta has been doing the viral rounds for some time. I have seen many versions of it and always wanted to try it. If you have a TV dinner night planned, this is the perfect dish for it - because it is a one pot dish and even the washing up is quick and easy.

I am going to use the picture of the tomatoes and the feta since that looks way sexier than the finished dish :-)

The beauty about this simple dish is you can add more vegetables if you like and chop and change the herbs. I was able to use up the asparagus in the fridge and you know I cannot be without chilli.  With the garlic, you can add less, I just love the smell and taste of baked garlic so I added more.  And one it is baked, you can mush it up like butter, so it is not even visible anywhere in the final picture!


Ingredients:

200gm Greek Feta

400 grams tomatoes

8-12 cloves of garlic

200 grams asparagus

200 grams pasta of your choice

2 teaspoons chilli flakes

1/2 cup olive oil

salt and pepper to taste

2-3 sprigs of thyme

1 cup torn basil to serve



Method:

Pre heat the oven on to 200 degrees C.

Empty contents of the feta, drain and place in the centre of the dish.  Add the washed tomatoes around it.  Peel garlic and place around the feta.  Next, wash and chop asparagus and mix it in with the tomatoes.

Add the thyme, salt and pepper and sprinkle chilli flakes all over.  Next, drizzle olive oil and mix the contents in the cooking dish so that they are all coated with the oil.  Place this in the hot oven for about 30 to 40 minutes - or till the tomatoes go mushy and the feta starts to melt.


While the tomatoes and feta are cooking, heat a pot of water and boil it.  Add pasta and cook till it is done.  Drain and reserve a couple of tablespoons of the water.  Set aside.


When the tomatoes are done, get the dish out and using a wooden spoon, mush the cheese and vegetables will, making it into a gravy.  Add the cooked pasta and mix well.

Serve hot with a garnish of fresh torn basil.


The creamy pasta coated with the feta and the roasted sweet tomatoes along with the basil and chilli is a satisfying meal, not to mention easy meal.
