My friend Anto introduced me to this pudding. It is a quick one to make and only 3 ingredients are used.
When you are invited to a Christmas party and have to take dessert, this is an easy one to make and share. It is not too heavy and is refreshing. Needless to say, it is also a crowd pleaser.
Ingredients:
2 cans pineapple - one cut in chunks and one cut in circles
1 tin sweetened condensed milk
1 packet pineapple jelly crystals
A few drops of yellow food colour - optional
Method:
Open the can of pineapple chunks. Drain it and reserve the syrup.
Heat the reserved syrup in a saucepan and dissolve the pineapple jelly crystals in it.
Set aside.
In another saucepan, empty the can of sweetened condensed milk and 1/2 a tin of water.
Mix well and add the pineapple chunks to it.
When this has warmed up, transfer to a serving dish, and add in the jelly that you made earlier.
Mix well. Cover and keep in the fridge to set.
To decorate:
Drain the other can of pineapples and reserve the syrup.
Pour the syrup into a small saucepan with a few drops of yellow food colour.
Boil it down to less than half the quantity, add the pineapple circles in and cook for a minute or so and turn the stove off.
After the pudding has set, place the circles on top and pour the syrup on top.
Note: This recipe is not possible the way I have written it with fresh pineapple. The jelly will not set if you use fresh pineapple.
