My son's absolute favourite side dish served with lamb chops. He makes it himself and has honed it down to an art form. Browned evenly with the potatoes cooked in cream that has cooked and turned into a butter like consistency - this dish is very easy to pig out on! Using only 4 ingredients, you really cannot go wrong.
Ingredients:
4-5 potatoes - I used Desiree, washed and sliced thinly and arranged in a dish
1/2 to 3/4 cup thickened cream
salt and pepper to taste
some herbs if you so desire!
Method:
Turn on the oven and set the temperature to 200 degrees Celsius.
Arrange potatoes, one sliced potato at a time in a dish. You can skin them if you want to, but I left the skin in. Tuck herbs in, if using.
Sprinkle salt and pepper. Then cover with cream. Place it in the oven - and let it cook. It takes between 35 to 45 minutes to get golden potatoes.
Serve hot with roast / barbequed meat and veggies.
