I do the same and though my children are out of school now, they still do enjoy this snack.
Ingredients:
5-6 left over idiappams, lightly broken up
4-5 scrambled eggs with salt and pepper
1 large onion, sliced
2-3 green chillies, slit
1 large tomato, sliced
salt to taste
1 tablespoon oil
1/2 teaspoon mustard seeds
Method:
Heat oil. Add mustard seeds. When they splutter, add the onions and green chillies and saute.
When the onions start to get brown, add the tomatoes. Cover the pan and let the tomato sweat and become mushy.
At this point, add salt to taste and tip in your left over string hoppers. Saute. Add the scrambled eggs. Mix well.
Serve hot with tomato sauce. I have served this with hot chilli oil.
