I made these to go with the ham for Christmas lunch. They look luscious and they have a bit of crunch and marry well with the ham. But you can serve them as a side dish with just about anything, really!
Ingredients:
8-10 carrots, topped, tailed, peeled and cut lengthwise into uniform strips.
4-5 garlic cloves, skin on
1 tablespoon olive oil
1 tablespoon melted butter
2-3 tablespoons honey
A pinch of dried oregano ( or rosemary - whatever you have )
a few sprigs of thyme leaves
salt and pepper to taste
Method:
Heat oven to 200 degrees Celsius. In a small saucepan, melt butter, add oil honey, oregano, salt and pepper.
In a large pyrex dish, place your carrots and garlic in a single layer.
Pour the spice/honey mixture over the carrots and rub well.
Place in the oven for 35 to 40 minutes, till the carrots are done. Add thyme in the last two minutes and put back in the oven.
Transfer to serving bowl and serve hot.
