This dish came about because I wanted to capture the Christmas colours of red and green in a dish.
It was very good with the ham with a touch of sweet and tart from the cranberries. I added a few toasted walnuts in the end - but forgot to take a picture!
Ingredients:
3 bunches of broccolini, cut lengthwise along the stem
Olive oil
salt and pepper to taste
1 tablespoon of cranberries
a few toasted walnuts for garnish
Method:
Heat the oven to 200 degrees C. Mix the olive oil in with the broccolini, add salt and pepper and leave in the oven for about 15 minutes or so till the broccolini is just done. You don't want the colour to change.
Take it out, mix in the cranberries and let it rest for a couple of minutes. Add the walnuts and give it a good mix. Serve hot.
