Crispy Fried Asian Beef Mince with Brown Rice

Thank you to Sugar Salt Magic https://www.sugarsaltmagic.com/ for this recipe that I have improvised and made into a quick lunch for the family.  I love Asian food and flavours and every now and again have a craving to eat Asian food.

I love Asian food for the ease of cooking, the variety of vegetables used and how healthy it feels and the vibrancy and colour of the food itself.

It is all in the prep for this recipe - once you have your ingredients prepped and ready, it is very quick.

This dish serves 4.



Ingredients:

500 grams beef mince

1 tablespoon ginger paste

1 tablespoon garlic paste

2 teaspoons chilli flakes

2 tablespoons light soy sauce

21/2 tablespoons Kecap Manis* ( see note below on how to make it if you do not have this in your pantry)

3 tablespoons vegetable oil

1 carrot, sliced thinly

1 capsicum, cut into strips

1 broccoli, sliced

2-3 table spoons sweet chilli sauce

2 teaspoons fish sauce

1 1/2 cups brown rice, cooked

salt to taste

Garnish:

2-3 birds eye chilli, sliced finely

Method:

Make the Kecap Manis if you do not have the sauce by mixing 2 tablespoons light soy sauce and 2 tablespoons brown sugar and warming it up till the sugar dissolves and the soy sauce becomes thick and sticky.

Place the beef mince in a bowl and add the Kecap Manis, soy sauce, ginger, garlic, chilli and a pinch of salt.  Mix well and keep in the fridge for 30 minutes.

Take a large saucepan and heat a couple of tablespoons of oil.  Fry the carrots for about two minutes.  then add the capsicum, fry for a minute and lastly add the broccoli and fry for two minutes.  Add sweet chilli sauce and fish sauce.  Mix well and transfer to a bowl.

Heat 1 tablespoon oil in the same pan and add the beef.  Mix well and fry so that the beef comes out looking dark brown and crumbly in texture.  This takes about 8-10 minutes.  Add the cooked vegetables with the sauce and mix till combined.

You can serve with the rice as a side dish or mix the rice with the beef sauce and have a one pot meal.

Garnish with a few chopped bird's eye chilli slices.

Enjoy hot.
