Cauliflower Mash

 Yaay!!! Its the long weekend and after a hard day's work - we settled on sausages and mash for dinner.

"No potato mash?" asked my son sorrowfully - "no, today we are doing cauliflower mash for a change", I told him firmly.

After I made it, I asked him to have a taste and said - "so? what's your verdict?  Do you like it?"

He scrunched up his nose and told me "I can still smell the cauliflower!"

Ahhh - like it or hate it, that is all we are having for dinner tonight.  Actually, I love cauliflower and I think this mash is really nice.  The roasted garlic gives it a nutty flavour and the creaminess comes from a touch of sour cream and grated parmesan.


Ingredients:

1 large cauliflower, cut into florets

3 tablespoons butter

3 tablespoons sour cream

6-8 cloves of garlic, sliced

3 tablespoons of parmesan cheese, shredded

1 teaspoon finely chopped rosemary

1 tablespoon finely chopped parsley

1 pinch cinnamon

3-4 tablespoons milk

Method:

Steam the cauliflower florets for about 15 minutes.  Cool it.

In a saucepan, heat butter and add garlic.  When it starts to become golden and fragrant, add the cinnamon and turn off the stove. 


Pour the garlic and butter mix along with the cooled cauliflower into a blender.  Add a couple of tablespoons of milk and blend till smooth.  You might have to do a couple of batches depending on the capacity of your blender.

Mix in the rosemary, parsley, sour cream and parmesan.  Mix well.  Season with salt and pepper.

Serve with hot grilled sausages.


To make the onion relish:

Slice 3 onions. 

Heat oil and fry the onions till they become limp and start to caramalise.  add salt and pepper to taste and a generous dash of balsamic vinegar.  Mix well and serve with the sausages.
