Snowpeas and Green Peas Salad

 Christmas, a time for creative foods, friends and family! This year we speant our Christmas day with my daughter's in-laws. It was a barbeque lunch and I was tasked with salads for the family. I had to prep the salads and take them over in containers and assemble them just before lunch. So I hunted for salads that could be put together quick, looked spectacular and tasted fantastic. Have a look at this salad - doesn't it say festive in bold letters?


Ingredients:
200 grams of snow peas, sliced finely into strips
2 cups baby green peas, blanched and immersed in ice cold water, and drained
1/2 a bunch of dill, chopped
20 to 25 mint leaves, shredded
juice and zest of 1 lime
1 cup yogurt
1/2 cup toasted and sliced almonds
For dressing:
1 red chilli, sliced
2 cloves of garlic, sliced
1/2 cup olive oil
salt and pepper

Step 1: Heat oil and pour over the chilli and garlic. Let it infuse for 30 minutes while you prepare the rest of the ingredients.
Step 2: Mix chopped dill, lime juice, lime zest, salt to taste with yogurt and beat with a fork to get a smooth consistency.



Step 3: Prepare snow peas and peas and mix it with the chopped mint.



Step 4: Assembly: Take a large platter, spread yogurt mix. Next add the snow peas/peas mixture. Lastly, dress with the olive oil that has been infused with the chilli and garlic. Just before serving, add the toasted sliced almonds.
