A quick, easy and healthy dessert, if you have it on its own; or a little indulgent with icecream - or if you would like to have it with yogurt, you can have it for breakfast too. I had it on its own and I was just testing the recipe out to see if I would make it again. I would definitely make it again - it looks spectacular, and it tastes nice. When you present it, it looks like you have gone through a lot of trouble making it. This is also a recipe where you can play with the pears, cheeses and nuts to make the final outcome sweet or savoury so you can serve it as a dessert or an entree. The sweetness of the pear, along with a touch of saltiness from the feta, the honey and nuts all add to the textures and flavours of this dish.
Ingredients:
2 Williams Pears, washed, cut in half and the seeds scooped out
1/2 tablespoon brown sugar and 1/4 teaspoon cinnamon powder, mixed
1 tablespoon olive oil
1 tablespoon crumbled feta
1 tablespoon chopped walnuts
2 tablespoons honey, with extra to serve on top
mint leaves for garnish
Method:
Step 1:
Wash and slice pears and remove seeds. Take a small slice off the back of the pear so it can sit stably in a saucepan. Turn oven on at 200 deg Celsius.
Step 2:
Place pears in a sauce pan, drizzle olive oil. Sprinkle the cinnamon brown sugar mix on top of the pears.
Cook till the sugar melts and there is a light browning on the pear.
Step 3:
In a lined baking dish, place pears and add feta and walnuts and bake till the feta just starts to melt - about 10 to 12 minutes.
Before baking:
After baking, turn the oven off, and with the pears still in the baking dish, drizzle honey over them and put them back in the oven till you are ready to eat them.
Serve warm with extra honey on the side (or icecream, or yogurt)
