Broken Glass Pudding

Have you walked into an old church and gazed at the stained glass windows? Have you wondered how many hours the people spent drawing the intricate shapes, amazing colours, cutting glass to shape, soldering the outlines....and creating the picture? Its hard work, I tell you! Just reading about it tells you that this job is not for the faint of heart.

Unlike this dessert which is kind of the same - as in it has beautiful colours, patterns and what's more you can eat it too!

I wanted to make my inner child happy - and jelly as a kid was a much looked forward to dessert. This recipe makes use of 4 colours of jelly and it is a very simple and light dessert, enough to make the child in you happy. It is visually appealing and is very light after a big meal.

Ingredients:

4 packets of jelly - I used green apple, orange, lime and port wine

1 sachet gelatine

1 tin sweetened condensed milk

Method:

To make the jelly, add 250 ml boiling water to one packet of jelly and pour into a pre greased glass storage container.  The storage container I used was 1 1/4 inch high, 5 1/2 inches long and 31/2 inches wide.

Stir in the jelly well, making sure it has dissolved.

Leave in the fridge for about 4 hours.

After about 4 hours, cut the jelly into small cubes and leave them in a pre greased glass dish - 9 x13 inches. At this stage arrange the jelly pieces so that you have a mix of the 4 colours all over.  You can leave this in the fridge until your condensed milk is ready.

Meanwhile, add 400 ml of boiling water to the gelatine sachet and whisk ell till it has dissolved.

Wait for about 15 to 20 minutes until the water temperature is lukewarm. Add the condensed milk and stir well.

Bring your prepared dish of jelly cubes and gently pour the condensed milk - gelatine mixture over it.  Burst any large bubbles with a spoon.  Leave in the fridge to set.

Cut to desired shapes and serve!

I played with the shapes - squares, parallelograms, circles......

Here is a picture of the National Gallery of Victoria Stained Glass ceiling that I adore!  I lay on the floor to get this picture! Such amazing colours!!
