Its been sweltering in Melbourne! Every meal has been an effort to cook. I have been cooking either very early in the morning or late in the evening. This tasty salad takes less than 10 minutes to prepare, is perfect for a hot and humid day and is refreshing and filling at the same time. It is sweet and salty, crunchy and soft, and the subtle minty coolness just forces your brain to think it is a cool day! :-)
Ingredients:
3 to 4 cups cubed watermelon
1 cup cucumber
1/2 an onion, sliced very finely
1 cup feta, crumbled
10-12 mint leaves, torn
Dressing:
1/4 cup good quality olive oil
1 tablespoon vinegar
1 teaspoon honey
a pinch of salt
pepper
1 tablespoon caramelized balsamic vinegar
Method:
Put all the chopped ingredients together in a bowl and leave it in the fridge until you are ready to serve.
In a small bowl, mix all the dressing ingredients except the caramelized balsamic vinegar.
Add the dressing just as you are about to serve and toss the ingredients well in the dressing.
To serve:
In a platter, drizzle the balsamic vinegar.
Add the tossed ingredients on top.
Serve immediately. Enjoy.
