When you are in hot and humid Kerala an ice cold Sambaram or Moru is the most deliciously refreshing drink you can have. It is a very diluted yogurt drink and served in the local milk bars in plastic sachets.
The last time I was in Kerala sweating it out in a queue in a Government Office, my friend handed me this nectar of the Gods - ice cold and in a sachet - and it was the most refreshing thing ever!
Salty, with a bit of bite to it and a few bits to chew into at the very end to clean the palate.
Of course this is also an essential item for the Onam Sadya and I often make it to combat the Melbourne Summers.
Ingredients:
1 cup thick plain yogurt
2 - 3 cups water
ice cubes
3-4 curry leaves
1 small shallot
1 green chilli
1/2 inch piece of ginger
4-5 coriander leaves
salt to taste
Method:
Whisk the yogurt with the water and salt and ice cubes. Set aside.
Chop finely all the rest of the ingredients and add to the yogurt mix.
Keep chilled until you serve.
