Beef Stir Fry

Middle of the week and you are after a quick meal to get your family satisfied - and Beef Stir Fry fits the requirement perfectly.  The cooking itself took about 10 minutes and prep the previous night took 10 minutes.  Nothing like having a meal ready in 10 minutes, huh?  :-)

Of course I made fried rice to go with the beef the previous night so I didn't have to spend too much time cooking tonight.




Ingredients:

1/2 kilo beef strips
1 yellow capsicum, julienned
1 red capsicum, julienned
200 grams of snow peas, cut into 1 inch squares
1 tablespoon garlic paste
1 tablespoon soy sauce
1 tablespoon oyster sauce
1/2 tablespoon dark soy sauce
1 tablespoon crushed chilli paste
1/2 tablespoon corn flour
1/2 cup water
1/2 tablespoon extra crushed chilli paste (optional)
A couple of tablespoons of vegetable oil

Method:

Wash the beef and mix with the garlic, dark soy, light soy. oyster and chilli. Marinate it in a stainless steel bowl over night.

I also cut the vegetables and left them in little containers in the fridge.

The next day, heat a wok on high.  Add 3 teaspoons of oil and cook the beef in batches, 3 minutes at a time.




Next, on high heat, cook the capsicums with 3 teaspoons of oil.



Add the optional chilli paste at this stage if you are planning to add extra chilli.  Next add the snow peas to the capsicum and saute well. 



Saute the snow peas - and while that is cooking, take the cornflour and make a slurry with the water.
Add the beef and give the entire thing a good mix.  Add the cornflour slurry and mix well.  the slurry thickens in a few seconds.  Turn off the flame.  Serve hot with fried rice.
