Mother's Day Lunch Platter

This year for Mother's Day, my children made lunch for me with no help from me.  This is the first time that they have done everything themselves from scratch.  And that includes doing the dishes afterwards too!

Here is my platter and the recipes are all easy.  Encourage your children to create one for you too!


Murali's lamb cutlets:



Recipe: 


Baked Potatoes: 


Recipe: 

Broccolini:



Recipe: 

Wash and trim 1 bunch of broccolini.
Steam for 4 minutes.
Drizzle with balsamic vinegar and a pinch of salt
Serve warm.

Corn:



Recipe:

Boil sweet corn for about 15 minutes in water till just tender.
Dress with garlic butter.

Serve warm.


Garlic Butter Recipe:

125 grams of soft butter
a handful of finely chopped parsley
2 cloves finely minced garlic
1/2 teaspoon salt

Mix well and use as needed.

Garlic Bread: 



A couple of store bought bake at home baguettes.
Slice the baguettes almost to the bottom without splitting the slices.
Spread garlic butter on the slices on either side.
Place in an aluminium foil and bake as per directions on the pack.

Serve hot.
