Kovakka Fry - Stir Fried Ivy Gourd


Ivy Gourd, or Kovakka or Tindora - it is one of my favorite vegetables.  It is very easy to cook - the only thing is you do not get the fresh in Melbourne.  I do get frozen ones in the Indian shops and here is an easy way to cook them.



Ingredients:

1 packet frozen Tindora (Ivy Gourd - sliced)
1/2 onion - sliced
1/2 teaspoon chilli powder
1/4 teaspoon turmeric powder
1/2 teaspoon mustard seeds
salt to taste
1 tablespoon oil

Method:

Heat oil and when it is hot add the mustard seeds.  When the mustard seeds crackle, add the frozen ivy gourd, the onions, the chilli powder and turmeric powder and salt to taste.  Keep sauteing - till the ivy gourd is cooked.  Usually takes about 6 to 8 minutes.



Serve hot with rice or chappaties.
