Bitter Melon - Fried

Cold rainy days, fried crunchy bitter melon some fish curry and rice - perfect meal for me!  Bitter melon is one of those vegetables - you either love it or you hate it.  I love them - and they are supposed to be full of medicinal benefits. If you cannot handle the curried ones, try these first - they are more like chips, crunchy and full of flavour and once you get used to them, then you can graduate to the curried ones!





Ingredients:

1 bitter melon, washed, topped and tailed and the insides scooped out and cut into thin roundels.

salt to taste

1/2 teaspoon turmeric powder
1-2 teaspoons chilli powder
1-2 teaspoons water to make a paste of the salt, turmeric and chilli



Method:

Smear the paste all over the bitter melon. Deep fry till it turns golden brown.



You can also marinate and leave the mix in the sun for a few hours and then deep fry it.

I sometimes leave it with the fan on in the oven for an hour or so - at about 25 deg C.  This also helps to dry out the moisture in the bitter melon and you can deep fry after that.
