Grilled Corn - Indian street food

On a day like today - when it is warm and muggy with a cool Melbourne breeze every now and again and perhaps even a passing shower, I think of Marina Beach in Chennai and my friends. 

We used to spend time watching the sunset and then dig into delicious street food served by the street vendors.

One of my favorites was grilled corn.  Fresh sweet corn grilled slowly over hot red coals and served with a dash of butter, lime, chilli and salt.  The salty beach air, the cool breeze, friends all added to the enjoyment of this simple dish.




Here I have recreated it on a grill, with the usual ingredients.

Corn - de husked, silk removed and washed.

A can of oil spray

Chilli powder, salt, butter and lime to serve.

Mix the chilli powder and salt and keep in a small container.

Cut the lime in half and keep ready.


Grill the corn.

Add a sliver of butter to coat the hot corn.

Rub down with the lime.

Use the lime like a squeegee - and every now and again touch the container with the salt and chilli and squeeze the lime juice while rubbing down the corn.

What you have is a beautifully sweet and juicy corn cob with a tang and a shot of chilli that takes you to heaven or hell - depending how much of chilli you scooped up with the lime.
