I love beetroots for their rich colour, sweetness and earthy flavours that can melt into different cuisines with no problem. Here is a very easy beetroot puree that is a sure hit with roast /grilled meat. It is easy to make and delicious to eat. Super healthy is an added bonus.
Ingredients:
4 large beetroot bulbs
1 large head of garlic
2-3 tablespoons olive oil
3-4 tablespoons fresh Greek yogurt

salt to taste
Method:
Pre heat oven to 200 degrees C, fan forced.
Wash and cut beetroot into quarters - leave skin on.
Place in a roasting pan with the full head of garlic.
Drizzle 1/2 a tablespoon of olive oil.
Cook for an hour or so till the beets become soft.
Let the beetroot pieces cool down. Peel off the outer skin, chop roughly and place in a blender.
Take the garlic and remove the skin, and place the roasted garlic cloves in with the beetroot pieces.
Add olive oil, yogurt and salt and blitz to a silky paste.
Mix well and serve with your roast / grilled meat.
Serve cold.
