It is always lovely when the children tell me they want to cook dinner. I sit back and relax - and only get tense if they delay - ha ha!!!Tonight was one of those nights, I sat back, made a long phone call to a girlfriend and the children covered dinner. We had tortillas - and a mix of store bought and home made accompaniments. A satisfying meal - I was even happy to wash the dishes afterwards!
Tortillas are unleavened flat breads like chappaties, made from plain flour. However the children preferred to get the ready made ones from the store. What makes this interesting and fun are the colorful accompaniments and the fact you make them up as you go along. So you take one piece of bread, fill it with all the things you like ( and I forgot to show the sour cream in the picture) - wrap it up and eat it. These are perfect for an easy mid week dinner when you do not feel like cooking.

Ingredients:
1- 2 packs Tortilla bread
Shredded cheese
Shredded Lettuce
Chopped Onion
Chopped Tomato
Pickled Jalapeno Peppers
Salsa (store bought)
Tinned red kidney beans, drained
Corn Kernels, microwaved for a couple of minutes
Sour cream
Chipotle sauce (store bought)
Beef Mince Sauce
Guacamole
For Beef Mince Sauce
- 1 onion, chopped
- 1 red pepper, chopped
- 1 green pepper, chopped
- olive oil
- 2 cloves of garlic, chopped
- 1 pinch of chilli powder
- 1½ teaspoons cumin, powdered
- 500 g minced lean beef
- 250 ml beef stock
Method:
Heat oil, soften the onions and peppers. Next add the garlic, chilli powder, and cumin powder and cook for a couple of minutes. Add the beef and brown it well. Next add the stock, and cook for 45 minutes to 55 minutes till reduced and the liquid is absorbed. Set aside.
For Gaucamole:
2 avocados, peeled, de-seeded and mashed
1/2 a lime, juiced
1/2 a tomato, chopped finely
a tablespoon of onions, chopped finely
Mix all of the ingredients well, add salt to taste.
Assembly:
Warm up tortilla bread. To the middle of the bread, add some guacamole, beans, beef sauce, corn kernels, jalapenos, corn, tomato and onions. Add some cheese, top off with a dollop of sour cream and a squeeze of chipotle sauce. Roll up and enjoy!
