I am down to the last of the okra. This preparation is an age old recipe for okra and it goes well with most rice dishes. It is also a very healthy version and not slimy so even kids will eat it!
Ingredients:
250-300 grams of okra, cut into roundels
1 large onion, chopped
2 green chillies, slit
1/2 teaspoon mustard seeds
1 tablespoon shredded coconut
2-3 tablespoons oil
salt to taste
Method:
Wash and dry the okra and cut into roundels. Ina saucepan, heat oil and add mustard seeds. when the seeds begin to crackle, add the onions and start sauteing. When the onions go transparent, add the okra and green chillies and saute. Reduce the heat and cook the okra in a low flame.
This step takes a long time - because essentially you are cooking the okra in its own slime. It takes awhile for all the slime to dry out and the okra to be cooked.
The beauty about the okra is that it still retains the beautiful green colour after it is cooked.
Add salt and the shredded coconut at this stage.
Mix well and transfer to a serving dish. Serve hot with rice and dal or chappaties.
