Broccoli - Mandarin Salad

In our household we all love broccoli. Since mandarins are in season, I just mixed a few segments of mandarin with the broccoli.  The pop of flavours in your mouth is really nice with this combination!  Hope you enjoy eating it as well.

Ingredients:

1 head of broccoli, washed cleaned and broken into florets, stems sliced up
1 mandarin, segmented and pith removed
1 tablespoon olive oil
1 tablespoon balsamic vinegar
salt and pepper to taste

Method:

Place the broccoli in a microwave proof bowl, covered.  Cook for 5 minutes.

To the broccoli add the mandarins.

Make a dressing with the olive oil, vinegar, salt and pepper and drizzle over the broccoli / mandarin mix.

Mix and serve.
